Have you tried this recipe with other oils, like a macadamia or walnut oil? We cook a lot with coconut oil...I wonder how that taste would go with the okra and curry? I&#039;ll save that for an experimental night.</description>

I make this one in a lower fat version by laying the okra on a parchment lined baking sheet, spraying with a bit of cooking spray, then baking at 350 for 15 minutes. I cook the rest of the ingredients (but with 2 tsp of oil, rather than the exxon valdez level i did in the original) on the stove while the okra bakes. They get tossed together at the end. Thanks so much for the lovely article.</description>
