<p>4 Maple Leaf Farm Duck Breasts</p>
<p>For marinade combine in food processor<br />
1 small onion<br />
1/2 cup fresh orange juice<br />
3 Tbs peanut butter<br />
1 Tbs peanut oil<br />
1 tsp curry powder<br />
1/4 tsp cayenne pepper<br />
1 tsp kosher salt<br />
1/4 cup brown sugar<br />
1 tsp cinnamon</p>
<p>Procees mixture until smooth and add to duck breast in gallon ziploc bag and marinate overnight</p>
<p>Basting sauce</p>
<p>1 cup duck or chicken stock<br />
1/2 cup fresh orange juice<br />
1 Tbs peanut oil<br />
1 tsp curry powder<br />
in small saucepan bring sauce to a simmer<br />
Reserve some for serving with duck</p>
<p>Heat grill and cast iron pan<br />
Sear duck fat side down in hot cast iron pan<br />
Halfway thru cooking transfer duck to grill grates and baste with warm basing sauce while it cooks on medium high heat<br />
until medium rare<br />
Let duck rest on cutting board for 5-7 minutes and slice</p>
<p>Serve with Basmati Rice and roasted butternut squash</p>
