This is great for lunch or dinner if you want something light and refreshing!
1 lb boneless skinless chicken breast
1 cup plain greek yogurt
1 Tbs curry powder
1/2 tsp ground ginger
1 cup halved seedless grapes
1/2 cup toasted chopped pecans
1/2 cup halved cherry tomatos
2 celery stalks chopped
1/4 cup red onion chopped
3 green onion chopped fine
salt and pepper to taste
Season chicken with salt and pepper and grill over medium high heat until cooked thru
Let cool and chop into small chunks or shred depending on your preference.
Blend in remaining ingredients and chill in fridge for few hours
Serve on bed of greens or in tortilla wrap
