It’s a cold night in Minnesota Goulash…
Sunday, February 12th, 2012I talked to my friend Jodi, she said the warm weather in Minnesota has gone South! I remember when I lived in Minnesota, this was one of my favorite comfort foods when it was cold outside! Even though it is going to be 79 today, I have a craving for this hot dish!
At that time, I always had garden fresh canned tomatoes that I used; but you can you chopped fresh tomatoes or store bought canned tomatoes too. If you use fresh tomatoes, I would recommend blanching them, then peeling them first!
When my Grandma Donna made a hot dish like this, she always put in a can of whole kernel corn. I like it with or without!
MINNESOTA GOULASH:
1 1/2 #’s lean ground beef
1 large onion, diced
2 cloves garlic, minced
1 1/2 cups water
1 can (15 oz) tomato sauce or 1 can (15 oz.) tomato soup
2 cups fresh diced tomatoes or 1 can (14.5 oz.) diced tomatoes
1 T. plus 1 1/2 tsp. soy sauce
4 dashes Worcestershire sauce
1 T. dried Italian seasoning
Pepper to taste
2 bay leaves
1 tsp. seasoning salt
1 cup dry elbow macaroni
In a large pan, brown ground beef with 4 splashes of worcestershire sauce. Drain off any excess grease. Add onion and garlic, cook until onions are tender. Add water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, pepper and seasoned salt, Add dry noodles, bring to a boil, then reduce heat to a simmer, cover and cook for 20 minutes. Remove bay leaves before serving.
My grandma always served hotdishes with buttered saltine crackers
